Summer is here!

Summer is here and our new menu items have become a hit! All three restaurants are rolling out new summer dishes and people are loving them.

Music in the Park has started, our patios are in full swing, The Penn Theater is a great place for a movie and the Farmer’s Market is alive and buzzing with great local products! Compari’s even has new summer hours, opening at 11am on Saturdays and 12pm on Sundays.

December Newsletter

We would like to send Holiday Wishes to each and every one of you!

This Holiday season, Fiamma will be open every Sunday serving an amazing prime rib dinner.

Fiamma will also be open Thursdays and Fridays, December 12,13,19 and 20 for lunch!

If you have not yet tried our Sunday brunch at the Sardine Room, you are missing out.  Stop in after a walk through the festive Kellogg Park.

 

Chef’s Table

The month of December is always full of travel, holiday shopping, and seeing all our friends and family for the holidays. This month I would like to share with you for the holidays a great brining recipe for any kind of poultry if your having family over for dinner.
Ingredients:
1 gallon apple juice
1 quart vegetable stock
1 cup kosher salt
1/4 cup smoked sea salt
2 cups brown sugar
1/4 cup cloves
1/4 cup all spice berries
1/4 cup ginger puree
1/4 cup black peppercorns
1/4 cup mustard seeds
6 bay leaves
6 cinnamon sticks
Combine all ingredients together and slowly bring up to a boil stirring occasionally. Once the brine has come to a boil, cool overnight. Add brine to your washed poultry in a brining bag which you can get from the grocery store and squeeze all the air out of the bag so the poultry is fully submerged. refrigerate for 2 hours per pound. Before cooking remove from the brine and pat dry.

With the cool air starting to roll down the streets of Plymouth, it’s the time of year to devour tasty grilled morsels from the comfort of a truck bed or lawn chair. The skill involved in balancing a paper plate, a solo cup, and reaching over your uncle to get to the baked beans are true skills known only to the best of the best, Tailgaters!

October is the month where we all see a big turnaround in products coming into season for the fall:  Pumpkins, gourds, apples, and mushrooms are all in season now and you will see them used in many different ways. Our fall menu will be in place shortly bringing you the sites and smells of the fall harvest and giving all of you something to look forward to this month. From my garden to your table…

Although Labor Day weekend always seems to be the last hooray for the caveman-like instinct to put raw meat over an open fire of coals or the backyard warrior to show off his signature bbq back ribs and the ingenious of a beer bottle opener attached to the deck railing, its also the time of the year when our gardens are in full production and the preparation for fall harvest.
 My name is Dave Burnell and I am a city resident of Plymouth and also the Executive Chef at Fiamma Grille. My goal over the next few months is to bring you up to speed on the changing of the season, give you some tips in the kitchen and what new products are coming through the doors at Fiamma for your palate to explore. Just recently Paw Paw season has been in full swing and I was lucky enough to bring some of this “not for sale” in your local grocery store fruit in from the west side of Michigan. So what do you do with this Michigan fruit that has a flavor profile of mango and banana? Pie of course! But I am sure I will create some exciting sauce with it as well for the Plymouth patio season veterans so that we can all cling to the great flavors of summer and transition into the begin of our fall harvest. July Newsletter

Summer is in full swing! 

 

We would like to thank you for all the support that you have shown us and our restaurants.

Our latest venture, The Sardine Room, has received rave reviews! The Sunday brunch menu paired with soothing live music of The Ted Roberts Trio has been an enjoyable dining experience. 

Winner Winner Chicken Dinner is the cry heard on Mondays! This weekly promotion features $9 chicken dinners with 2 sides and $2 Tecate bottles.   

 There are some great “Music in the Air” acts still to come this summer so do not miss out!  Fall will arrive fast so don’t miss your opportunity to enjoy the lovely patios at each of our three restaurants.
